Contemporary Euro/American knives, manufactured after 2010, typically have 15 degree edges. When we describe knife edge geometry, the numbers of degrees are for one side of the blade only. Thus the total (both sides) edge angle of a traditional Euro/American style knife is 40°, a contemporary Euro/American or Asian style knife, 30 degrees.
